Quick Bagel Bites

I am always on the hunt for something quick to make on those busy days where you have to work late or your just way to tired to actually make something fancy. Bagel bites are something that I have eaten since I was a kid. I would always see the bagel bites commercial on tv when I got home from school so my brother and I were so excited to eat them as a snack when my mom finally caved and bought a box from the frozen section at the grocery store. Since then I have upgraded and now make my own quick homemade version of the frozen treat. It’s not as fast as opening the freezer and placing the frozen treat on a baking tray in the oven, but it’s still quick and equally as delicious. All you need are english muffins, my favorite are from Trader Joe’s, tomato sauce, mozzarella cheese, and all of your favorite toppings.

Ingredients:

  • English muffins
  • Mozzarella cheese
  • Tomato sauce (any brand will do)
  • Black olives
  • Garlic salt
  • Red chili flakes

Directions:

  1. Pre-heat oven to 375 degrees.
  2. Cut each english muffin in half (one muffin makes two bagel bites).
  3. Before I put the sauce on each half of muffin, I like to sprinkle so either garlic powder or garlic salt onto each muffin for some add flavor.
  4. Spread about a spoonful of sauce onto each muffin half.
  5. Sprinkle cheese on top.
  6. Now the fun part, toppings!! You can add whatever toppings you like. I prefer olives, a little bit on onions, and sometimes I will add pieces of pepperoni or pancetta.
  7. Once you add your desired toppings place in the oven for 10 mins or until all the cheese as melted.
  8. Enjoy!

Happy New Year!

I know! I Know..it has been a million years, but I am back. I hope you all had an amazing 2017 and start to the new year so far. One of my major resolutions for 2018 is to start blogging again. Life got the best of me last year, and between moving and facing new challenges in my life I just lacked the inspiration and time to blog. One of the things I like to do at the end of each year is to reflect on what I can do better or be better at in the next year. For me one of the things that I really missed doing was blogging, because it was a way for me to create and share as well as show my creative side, and a fun way to write and interact with the world.

So hears to all of us doing our best to fulfill all of our resolutions for the years as best as we can. I know that life happens and sometimes it can be hard but if we push through we can achieve all of our goals! Cheers to the new year and I hope you all have a great 2018!

Book Exchange

Hey guys!! Hope you are all having a great friday so far!! It’s really hot here 99F right now, maybe a too hot for me, to go into the pool!! lol…But a good day to stay in and read. 🙂 I went to Target this week (which is never a good idea, I always end up buying stuff I don’t need), I ended buying lots of new books!!!

I am always looking for new books to read, other than science books for school…so I went on Pinterest/NY Times best seller list to find reviews of various novels. While on searching I found this really cool photo that I thought I would share with all of you!!

Book Exchange in London

It’s call the second hand book exchange!! I think that whoever created this idea is a genius!! They turned old telephone boothes in the UK into miniature libraries! All you have to do is take a book and leave one behind. Especially in a time where practically everyone has a cell phone this is a neat and great idea. I wish we had had telephone boothes where I lived.
